A magazine portrait photographer during the 1980s, for Vogue, Elle and Tatler, Dan Lepard stopped photography and needed a big change. After working in kitchens, he fell into a union with breadmaking that hasn't ended.

Co-author of Baking with Passion, the award-winning book about the former Baker & Spice bakery in Chelsea, London, Dan works with bakers around the UK helping them shape recipes that make good use of the best flour and ingredients.

Last year presented with the British catering industries highest accolades, in recognition for his outstanding achievement, at the 2003 Carlton London Restaurant awards, Dan has continued to work closely with chefs who have benefited from his baking, including Alastair Little, and Giorgio Locatelli at both Zafferano, and recently at Locanda Locatelli, and with Jim Webb at Ottolenghi in Islington.

'Baking with Passion' (Quadrille 1999) was the winner of the Guild of Food Writers 'Cookery Book of the Year 2000', and short-listed for the André Simon Award 1999. He writes for the British Baker, a baking industry weekly, contributes to radio, television, magazines and newspapers on bread and baking.
